 fresh egg pasta

procedure
First, clean and julienne all the vegetables, blanch them in a pan with abundant salted water, then drain them and cool under running cold water. In a pan, lighlty cook the garlic in oil, add the vegetables, salt and pepper and cook for a few minutes. In a high-sided pan with abundant salted water cook the tagliatelle, drain them and add to the vegetables. Sprinkle with grated cheese, mix everything well and drizzle with olive oil.

Serve on dinner plates and garnish with sprigs of parsley.
